Whiskey sour
The Whiskey Sour, which has sated thirsty drinkers for more than one and a half centuries. It’s unknown exactly when the cocktail was conceived (or who was the architect), but its history stretches back to the Lincoln administration, and the first printed recipe appeared circa 1862 in the famed “Jerry Thomas Bartenders Guide.
The whiskey sour is s a type of sour, a mixed drink with a base spirit, citrus juice, and a sweetener.

Old Fashion
The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.) It is a stirred drink, usually built in the glass in which it is served.

Expresso Martini
Invented by Dick Bradsell back in 1983 during his tenure at the Soho Brasserie, it was originally christened the “Vodka Espresso”. Cocktail legend has it that a young, future supermodel sidled up to the bar and asked Dick to make her a cocktail with coffee. He mixed her a drink using: vodka.
The espresso martini is a cold caffeinated alcoholic drink made with espresso, coffee liqueur, and vodka.

The Negroni
It is said that the Negroni was born out of the Milano-Torino, which was invented in the 1860s at Caffe Camparino in Milan, Italy. Being popular among Americans who often requested for the drink to be modified with a splash of soda water, the name, Americano, was born.

McHenry
McHenry Distillery is Australia’s southern-most whisky distillery and with its family heritage makes it the southernmost family run distillery in the world. Its location takes advantage of the cool-moist-maritime environment, giving the maturing spirit the right conditions to make the most of its time in the wooden barrels. The property also has its own abundant pure spring water which becomes the heart of the developing spirit.

Strait
Strait’s first production run was in April 2006, making it the first of the new wave of gin distillers in the country. If you’re wondering why you’ve never heard of Strait, while you have (maybe) heard names such as West Winds and Distillery Botanica, this is due to a quirk of fate at a time when gin distilling was at the start of its resurgence. By 2008 Strait were already exporting their product to China, Indonesia and Vietnam, when they were forced out of production due to the sale of their location and then the GFC.

Old Kempton Distillery
Old Kempton Distillery, situated in Dysart House, Kempton Tasmania is full of history and amazing gins.
Dysart house, Kempton, has been home to Old Kempton Distillery since November 2015. On site they make a variety of spirits including; single malt whisky, gin, and liqueurs. All made using 100% Tasmanian ingredients.
Gins Include: Six Shillings, Embezzler and Barrel aged Gin.

Natures elements help us create our products
We are a family based boutique distillery. Perched on the west coast of Tasmania we are battered by the roaring forties winds which travel from Patagonia south America more than 16000km away untouched by land until they reach us.
The winds deliver fresh air, sea mist and pure rain water from which we craft our whisky, gin and spirits. Production commenced in late 2019. Many years of sampling, collecting, research and practice have preceded this time.

base featuring our pure salt influenced rain water.

Tasmanian Whisky
McHenry Single Malt Whiskey
ABV42% – American Oak Ex Bourbon Hillrock finished in French blood tubs.
Nose:
Light all spice, white pepper, floral hints of rose and banana, with a caramel, citrus and vanilla top note.
Palate:
Oh so smooth! Buttery floral notes, with caramel on the edge of the palate.
Finish:
Ends on a slight spice note, with hints of caramel that continue to linger.

Old Kempton Distillery The Old Stables
The Old Stables, named for the 1842 stables these beautiful barrels are aged in, was produced as an informal introduction to Tasmanian Single Malt Whisky. The whiskies, married together to produce Old Stables, were distilled and matured at Dysart House, Kempton. The Old Stables introduces our customers to the range of whiskies produced by Old Kempton. Bottled at an approachable 40.5% ensures this modest expression is ideal for everyday drinking and sharing a dram with friends. Colour: Golden Brown. Nose: Sherbet & fruit. Sweet, leatherwood honey. Palate: Sweet up front then a luscious build across the palate. A well balance whisky with wonderful bright sherry notes. Finish: A soft and elegant finish.

Old Kempton Distillery Classic Pinot
Nose: this dram presents delicate lifted floral notes with a sweet cherry element that is the signature of Pinot Noir ageing.
Palate: a clean and sweet explosion of flavours greets the palate then settles to a warm and delicately delicious mixture of the stone fruit and floral elements.
The finish is long and clean with lingering chocolate and toffee sweetness underlying the crisp pinot cask oak tannins which give this dram its elegant appeal.

Old Kempton Distillery Classic Port
Nose: Dominated by sweet and fruity elements with undertones of rum and raisin chocolate adding depth.
Palate: Welcomes the soft yet wonderfully warming spirit with deep dark fruits and pantry spices dancing together to create a mouth-filling experience that only a port cask can deliver.
The finish is beautifully supported by the late arrival of the soft oak tannins and hints of dark chocolate and coffee grounds.

In celebration of the 2021 Dark Mofo, Winter Feast. Aged in an ex-bourbon cask and bottled at 58% abv.
